Modern people's pursuit of health has penetrated into all aspects. Chinese people, who are deeply affected by "disease from the mouth", have also begun to pay attention to the problem of the ingredients for food.

With the growing health trend, the Internet is full of "pseudo-professional" claims, true or false, which cannot give consumers accurate guidance.

Baker’s Kingdom adheres to the principle of "professional questions to be answered by professionals!". Mr. Wang, the director of Baker’s Kingdom Research and Inspection Center, is warmly invited to set up a popular science column to popularize food knowledge from a professional perspective so that the consumers’ choices are no longer ambiguous.

The theme today is matcha. According to the latest research report of Global Market Insights Inc., based on the continuous growth of demand for health and safe products in various tea flavors, coupled with the application of matcha in desserts and tea drinks, the traditional matcha market is expected to exceed $2.5 billion totally worldwide by 2027.

640-2

So what exactly is matcha? How to choose matcha?

Let's take a listen to Mr. Wang's answers!

Question 1: In the eyes of the most consumers, they usually can't distinguish between green tea powder and matcha powder. Are they the same thing?

Matcha powder and green tea powder are both made from green tea but they are not the same concept. They can be distinguished from the following points:

  1. Price:The most regular prices will vary significantly. Green tea powder is relatively cheap. Matcha powder is relatively expensive. It is worth noting that the green tea flavor on one of our matcha powder packaging is only the flavor name and the product is strictly completed in accordance with matcha powder production standards, from ingredients to production processes. More than ten years ago, the market perception of matcha powder has not yet been determined while the user survey showed that the domestic market at that time was more inclined to green tea flavor. As one of the first manufacturers of matcha powder in the domestic baking industry, our company finally confirmed this name. For more than ten years of growing with the market, Baker’s Kingdom green tea flavored matcha powder has always been popular in the market and has been recognized by the consumers and the market. Thus our company has used this name till now.

  2. Colour: Matcha powder is in dark green or emerald green while green tea powder is in grass-green or yellow-green.

  3. Aroma: In addition to the green tea flavor, matcha powder also has a special slight seaweed flavor. Green tea powder has a grassy smell.

  4. Taste: Matcha powder is not astringent or bitter. Green tea powder is slightly bitter.

  5. Fineness: Matcha powder has fine grain size and has a noticeable silky feeling when applied on the back of the hand. Green tea powder has coarse grain size and there is a clear friction feeling when applied to the back of the hand.

  6. Soup Colour & Foam: After getting brewed, matcha powder can form rich and delicate foam and the soup color is in vivid green. Green tea powder, on the other hand, is difficult to form foam due to the coarse particles and the soup color is in dark yellow.

    640-5

  7. Ingredients: Matcha powder needs to be selected from a suitable tea variety, covered with shade and getting picked only once a year in spring. Green tea powder comes from common tea species that can be picked several times a year.

    640-6

  8. Processing: Matcha powder is refined by using a unique tea milling processing technology and then through screening, winnowing, homogenizating, fine grinding (such as ball milling, stone grinding, etc.), sifting, metal detecting and other processes.

Question 2: What is the standard of matcha powder in terms of regulations?

Although matcha powder currently has GB/T 34778-2017 "matcha", it’s used in different application fields. This national standard is relatively simple so many matcha manufacturers compile their own enterprise standards. Our company's flavored matcha powder is in accordance with the enterprise standard Q/HYQ0003-2019 "flavored matcha powder", focusing on the ingredients, scope of use, amount of use and other detailed specifications to ensure that it conform to the corresponding national laws, regulations and GB 2760. In addition, our company also strictly follows the national regulations in terms of plasticizers, using aluminum foil packaging to avoid the packaging contains excessive plasticizers.

Question 3: When it comes to matcha powder, many consumers think of Japan. What do you think of the current matcha powder market in China?

As we all know, matcha originated in China's Wei and Jin dynasties, flourished in the Tang and Song Dynasty. During the Southern Song Dynasty, matcha was introduced to Japan. In recent years, it has been more prosperous in China. Since ancient times, the literati have left a large number of poems praising matcha, "The blue clouds lead the continuous wind, the white flowers float on the bowl" are the praise words for match by poet Lu Tong in the Tang Dynasty.

At present, in China, many consumers think that grinding green tea into powder is matcha powder and some think that the difference between matcha and green tea powder is only the thickness, the fine grinding is matcha powder and the coarse grinding is green tea. Some people think that only matcha in Japan is the right one and the flavoring added one is not the high-quality matcha powder.

It can be seen that the clarity and differentiation of concepts are very important for the perception and the matcha standards.

In the context of rapid growth of industrialization as well as urbanization, Environmental and health issues becoming increasingly prominent and people's increasing requirements for nutrition and health, matcha, as a natural nutritional health product, is widely used in many industries such as food, beverages, health products and cosmetics. The nutrition of a cup of matcha is equivalent to 30 times that of the same cup of brewed green tea. Therefore, the prospects of China's matcha powder market are immeasurable.

Question 4: Finally, can you teach us some tricks to judge matcha powder?

How to identify matcha is required to understand the ingredients of matcha and the delicate process of production. Taking Baker’s Kingdom matcha powder as an example, I make a simple explanation from the ingredients to the finished product.

Ingredients:

Choose high-quality tea species such as Longjing 43, Jiukeng, Xuebei and so on. Tea plants are required to grow vigorously in good tenderness and with green leaves; Crude fiber is within 49%, theanine is greater than 1.0% and tea polyphenols are between 8%~15%.

Planting:

When the new shoots have grown to one bud and two leaves, shade cover begins covering for 1 to 2 weeks. After the tea leaves have grown to one bud and four or five leaves, the net is uncovered before the ingredients are picked. The purpose of shade covering is to increase the chlorophyll content to make matcha powder looks more vividly green.

Processing and Manufacturing:

After picking, fresh leaves are milled tea through steaming, drying, secondary stem leaf separation as well as other processes and then refined by screening, winnowing, homogenization, mill fine grinding, sifting, metal detecting as well as other processes.

Product Application:

Our matcha powder has many series, divided into flavored matcha powder and pure matcha powder.

Flavored matcha powder is mainly used in baking so natural chlorophyll, sodium salt and food flavor are added to enhance its color to strengthen browning and avoid flavor loss in high-temperature baking. In the principle of introduction in Article 3.4.2 of GB2760-2014, it is clearly stated that when a food ingredient is used as the ingredient for a specific final product, the approved additives for the above specific final products are allowed to be added to these ingredients and the amount of the additive in the final product should meet the requirements of this standard. The label of the particular food ingredient shall clearly indicate that the ingredient is used in the production of the above specific food. This is also clearly marked on the label of our flavored matcha powder to comply with the principle of GB2760-2014.

Pure matcha powder can be used in various food and added appropriate amounts to meet the production needs. At present, it is mainly recommended for cold processing such as beverages and ice cream, which can more effectively maintain the nutrients, the color and the flavor in matcha powder.

Conclusion:

  2. Showcase how real matcha powder performs in all aspects of application.

We test the color and oxidation resistance in cake and mousse.
